This is a fast and easy recipe that's very, very tasty.
1 box Betty Crocker Gluten Free Yellow Cake Mix
1/2 bag or 1 Cup Vegan Chocolate Chips (or more if you want more chocolate..... who doesn't?)
1 Can Pumpkin (approx 15 oz)
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. allspice or cloves
Preheat oven to 350 degrees or the temperature recommended on the cake box to bake a cake. Empty cake mix into a large mixing bowl and add other dry ingredients (cinnamon, nutmeg, allspice, etc). Add the can of pumpkin and chocolate chips and mix well. Spoon heaping amounts of batter onto cookie sheet, maybe a rounded 1/4 C size or larger. Bake for approx 20 minutes or until a toothpick inserted into a cookie comes out clean. My first batch of these it took maybe 25 minutes to bake, but my cookies were really big. Enjoy!
